for the last several weeks, i have been craving pineapple and white potatoes (not together of course). i kept forgetting about that craving when i sat down to make the weekly menu. guess what, people? i finally remembered this week. we are having pineapple! we are having white potatoes! amen! yes, i may be slow, but it is worth the wait. worth. the. wait!
sunday - chicken enchiladas
summer squash, zucchini and shredded carrots
watermelon, cucumber and feta salad
monday - corn, beef, tomato and potato pie with sharp cheddar
greek yogurt
brussel sprouts in butter
blackberries

friday - eat filet of fish sandwiches at mcdonalds
saturday - retirement party (or leftovers)
sunday - tender pork loin over black beans
baked brie with garlic and rosemary crackers
greek salad with orange peppers, cucumbers, tomatoes, olives and feta
asparagus with dill
summer squash casserole
quinoa with pesto and mushrooms
raspberry jello with fresh raspberries
sliced oranges
peach cobbler with whipped cream
