zucchini parmesan tots

you will need: food processor, melon baller scoop, mini muffin tin, measuring cup, pam
yields 4-6 servings

2 small green zucchini, skin on
1/4 small onion
1/2 cup grated parmesean cheese
1/4 cup panko bread crumbs
2 eggs

preheat oven to 400 degrees.

place onion and zucchini in food processor until finely chopped.  mix together the rest of ingredients (remove blade and use processor bowl so you don't dirty another dish).

scoop mixture into greased tin. use your fingers to press together (no air bubbles).

bake for 20 minutes or until they have a brown crust on the edge.  remove and serve.
