menu planning 5/1-5/7

sunday - parmesan crusted chicken
spaghetti squash with alfredo sauce, leeks and broccoli
cherries
microwave peanut butter fudge

monday - leftovers

tuesday - salmon en croute with spinach and garlic in a tarragon hollandaise sauce
cheese course (camembert, manchego, port salut, smoked cheddar)
asparagus
an apple tart with creme fraiche

wednesday - eat out at 'tacos and salsa' (mexican on wednesday to beat the 'cinco de mayo' crowd)

thursday - eat out at 'garbonzos'

friday - saucy beans and eggplant (recipe from bhg.com)
cottage cheese
caesar salad
strawberry shortcake

saturday - brats with sauerkraut
pasta salad
baked beans
sliced tomatoes
garlicky potatoes
watermelon
lemonade
rocky road ice cream

sunday - prosciutto, fontina, and fig panini (happy mother's day to me!)
blue cheese-stuffed green olives
yogurt
carrots, celery, cucumbers and peppers with hummus
pears
