menu planning 8/14-8/20

it's vacation time. water. sun. laughter. simple, yet elegant food.

sunday - leftovers or blue corn nachos

monday - kale, jimaca and orange salad
bruschetta
grilled pepper kabobs
kiwi

tuesday - baked apricot and soy sauce chicken
curry roasted acorn squash and carrots with maple-rosemary glaze
grapes

wednesday - sun-dried tomatoes, green beans and potatoes with pesto
roasted eggplant
watermelon
brownies with banana 'ice cream' and hot fudge

thursday - waldorf salad with chorizo
cheesy colby jack mashed potatoes
cherries

friday - pumpkin, onion, apple, feta and pecan 'pizza'
raw broccoli
cherry tomatoes
goldendew melon

saturday - barbeque pulled pork with red peppers and coleslaw
summer squash medley with blue cheese
blueberries and blackberries

sunday - blt's on gluten-free bread
yogurt with honey
purple green beans
apple with peanut butter
