menu planning 10/2-10/8

the wedding was a fabulous time! we had prime rib for the rehearsal dinner and smoked brisket at the reception. delicious! one more week of gluten-free dinners and then we will go back to eating 'normal'. i don't believe going gluten-free helped with hubby's arthritis. i have heard cutting out the 'nightshade' family (mostly root vegetables) will help so we may give that a try.

sunday - potato and green chilies tortilla patata
green chili salsa
carrots, celery and peppers with sour cream dip
canteloupe

monday - shrimp, black bean, papaya and avocado salad
prosciutto wrapped around a fresh mozzarella ball
steamed broccoli, cauliflower and carrots
kiwi

tuesday - jicama, zucchini, sweet potato and black bean stirfry
green beans
applesauce

wednesday - risotto with crab, spinach and cucumbers in a lemon, honey butter dressing
feta-stuffed red peppers
caesar salad
strawberry sorbet

thursday - eat out at cork house

friday - leftovers

saturday - steak salad with tomatoes and green onions with ginger soy-sauce dressing
buttered spaghetti squash
brussel sprouts in caramel sauce
clementines

sunday - chicken parmesan wraps
broiled asparagus
fruit salad
