last week's meal plan didn't go that well; we ate out a lot. that sometimes happens when we get super busy and the meals i plan are too complicated. i thought i had several simple meals that we like included, but the lure of food made by someone else proved to be too tempting. i hate when that happens! this week we have nothing on the calendar so i'm getting a little bit more fancy. hopefully, we will be able to stick to this week's plan better.

chicken and cauliflower alfredo
you will need: grill tongs, baking sheet, cutting board, sharp knife, stock pot, saute pan, whisk, measuring cups
yields 6-8 servings

1/2 box whole wheat linguini
1/2 cup fat-free, low sodium chicken broth
1/4 cup skim milk
2 tablespoons extra virgin olive oil
2 teaspoons minced garlic
2 tablespoons flour
1 cup freshly shredded parmesan cheese
1 cup plain greek yogurt (i like fage 0%)
nutmeg
pepper
grill chicken breasts. while chicken is cooking, place cauliflower on baking sheet with 1 tablespoon olive oil. coat cauliflower and broil for 5-10 minutes or until browned and crispy. remove and set aside.
when chicken is done, remove from grill and allow to cool. place pasta in boiling water and cook according to package directions.
heat remaining olive oil over medium-low heat. saute garlic 1-2 minutes.
whisk in flour until smooth, about 2 minutes. gradually whisk in the chicken broth. add greek yogurt, milk, pepper and nutmeg and bring to a low boil, stirring constantly.
lower heat to simmer until the mixture thickens, about 3 minutes.
stir in parmesan.
drain cooked pasta, reserving 1/2 cup water. add water to sauce. cut chicken into cubes.
add chicken, cauliflower and pasta to the sauce mixture and toss to combine. can continue to cook down if too thin; if mixture too thick, add chicken broth to desired consistency. serve with more parmesan, if desired.

zucchini parmesan tots
you will need: food processor, melon baller scoop, mini muffin tin, measuring cup, pam
yields 4-6 servings
2 small green zucchini, skin on
1/4 small onion
1/2 cup grated parmesean cheese
1/4 cup panko bread crumbs
2 eggs
preheat oven to 400 degrees.
place onion and zucchini in food processor until finely chopped. mix together the rest of ingredients (remove blade and use processor bowl so you don't dirty another dish).
scoop mixture into greased tin. use your fingers to press together (no air bubbles).
bake for 20 minutes or until they have a brown crust on the edge. remove and serve.

open crescent package and separate rolls.
cut brie into 8 similar sized pieces and remove most of the rind.
place brie in large area of crescents and cover with a light amount of the fig spread.
roll up crescents, sealing in brie and fig spread.
bake as instructed on crescent package.

mushroom and green bean cheesy rice
you will need: rice cooker or saucepan with lid, saute pan, can opener, measuring cups, serving bowl, spoon
yields 4 servings
1 cup uncooked rice
1 1/2 cups chicken broth
1 cup water
1 package slice mushrooms
1 tablespoon butter
2 cans green beans
2 cups sharp cheese
pepper
cook rice in chicken broth and water as directed, until liquid is absorbed and rice is tender. (a rice cooker is great for this.)
while rice is cooking, saute mushrooms. add green beans and warm through.
transfer mushrooms and green beans to serving bowl. top with cheese. add hot rice and stir together. the heat from the mushroom/green bean mixture and the rice will melt the cheese.
season with pepper as needed.

what a game! we had a great night and my boys are very happy with the outcome. the boys have been complaining that we have not had potatoes in a long time. i realized they were right and i put them in rotation three times this week. the beachbody menu has lots of great ideas, but i am having trouble incorporating them. maybe next week i'll get back to it.

pear, cheddar and honey quesadillas
you will need: small bowl, whisk, knife, skillet, spatula, measuring cups
yields 2 servings
1 tablespoon honey
2 tablespoons raspberry jelly, heated
3 small wedges of wee brie
1/2 pear, thinly sliced
3/4 cup shredded cheddar cheese
2 tortillas
craisins(if desired)
spray one side of tortillas with butter or oil. whisk honey and brie together in small bowl until mostly combined. spread the mixture evenly on other side of both tortillas.
over medium heat place one tortilla cheese side-up in skillet. layer i/2 cheddar over the cream cheese and top with pear slices. drizzle with raspberry jelly. when you see the cheddar beginning to melt, top with rest of cheddar and other tortilla cheese side-down. press down with spatula to seal. carefully flip.
once cheese is melted and both tortillas are browned, remove from heat. slice into quarters and garnish with a handful of craisins.
