pear, cheddar and honey quesadillas

you will need: small bowl, whisk, knife, skillet, spatula, measuring cups
yields 2 servings

1 tablespoon honey
2 tablespoons raspberry jelly, heated
3 small wedges of wee brie
1/2 pear, thinly sliced
3/4 cup shredded cheddar cheese
2 tortillas
craisins(if desired)

spray one side of tortillas with butter or oil. whisk honey and brie together in small bowl until mostly combined. spread the mixture evenly on other side of both tortillas.

over medium heat place one tortilla cheese side-up in skillet. layer i/2 cheddar over the cream cheese and top with pear slices. drizzle with raspberry jelly. when you see the cheddar beginning to melt, top with rest of cheddar and other tortilla cheese side-down. press down with spatula to seal. carefully flip.

once cheese is melted and both tortillas are browned, remove from heat. slice into quarters and garnish with a handful of craisins.
