menu planning 4/15-4/21

sunday - balsamic vinegar, soy sauce and ginger tuna steaks
stir-fry veggies with squash and zucchini
baked sweet potato
honeydew melon

monday - chicken enchiladas
roasted cauliflower

tuesday - triscuit pull-apart 'pizza' with broccoli, red peppers and kielbasa
avocado, tomato and cucumber salad with feta

wednesday - eat out at lola's

thursday - bacon-wrapped sea scallops in garlic-paprika sauce
baked brie with fig spread
summer squash
tangerine and mango

friday - garlicky hamburger pot pie in phyllo dough
edamame, black bean, garbonzo beans and yellow pepper salad
mandarin oranges

saturday - scalloped potatoes and ham
plum tomatoes with mozzarella and basil
strawberry shortcake

sunday - peppers stuffed with rice, mushrooms and sharp cheddar
purple cabbage, pea pods and shredded carrots in teriyaki
spinach salad (from the garden)
sliced apples with caramel
